This muffin recipe was given to me by my Mother many years ago. It is a very easy recipe to follow and it can be customised to suit your own personal likes and dislikes. Everyone I've given this recipe to, says it is a favourite with their families.
These are all metric measurements.
Basic Muffin Recipe
2 cups plain flour
3 teaspoons baking powder
1/2 cup sugar
2 large eggs
1/2 cup canola oil
1 cup milk
1 teaspoon vanilla essence
Any flavourings you like:
eg. Chocolate chips, nuts or fruit.
Preheat oven to 200 degrees Celsius. Lightly grease a 12 cup muffin tray or fill with paper cases. Sift the flour and baking powder into a large bowl. Stir in the sugar. At this point, I stir in the other ingredients such as the fruit or chocolate chips.
In a separate bowl mix together the eggs, oil, milk and vanilla essence.
Add the egg mixture to the flour mixture and stir. Don't over stir, just enough to combine the wet ingredients with the dry ones. About 15 times.
Spoon the mixture into the muffin tray and bake for 20 - 25 minutes until golden. Depending upon your oven you may need to rotate them half way through cooking to get an even colouring.

Apple and Walnuts with Cinnamon
M & M's minis
Chocolate Chips with Cocoa (Double Chocolate)
Sundried Tomato with Feta and Basil
I think you get the idea. The flavours are only limited to your imagination.
